KOLHAPURI VEG RECIPE

INGREDIENTS

  • Cauliflower 1 cup
  • Capsicum 2
  • Potatoes 2
  • French beans 1 cup
  • Carrots 2
  • Tomatoes 4 (blended)
  • Brown onion ½ cup
  • Red chilies whole 4
  • Orange color 1/4 tsp
  • Oil 1/4 cup

For Kolhapuri Masala

  • Onion 1 medium
  • Garlic paste 1 tbsp
  • Coconut 1 tbsp
  • Coriander seeds 1 tbsp
  • Sesame seeds 1 tsp
  • Poppy seeds 1 tbsp
  • Cumin seeds 1 tbsp
  • Mustard seeds 1/4 tsp
  • Fenugreek seeds ¼ tsp
  • Cloves 4
  • Cinnamon 1
  • Cardamom 2
  • Dry red chilies 4
  • Coriander leaves 1 cup

 

METHOD

 

  1. Cut all the vegetables in big pieces.
  2. Heat oil in a pan and fry all vegetables. Remove vegetables in a plate.
  3. Grind all the ingredients under kolhapuri masala except coriander leaves.
  4. In same oil, add the kolhapuri paste, tomato puree, and fry well, now add fried vegetables, and leave it on dam till tender.
  5. Sprinkle coriander leaves and serve with pori.
